The ‘Scalable’ project aims to gain a better understanding of the metabolism of the agri-food system (SAA), meaning the material and energy flows involved in its operation and the organisation of economic operators. It follows on from the Boat and AF Filières projects, which looked in greater depth at the question of the material and organisational vulnerabilities of the agri-food system, and in particular, supply chains. It is being implemented at three levels: national, regional and the PAiT for the Greater Grenoble region.

For the PAiT, a major field survey is currently being carried out among farms and processing operators in the dairy, meat and arable sectors. This will be used to prepare discussion workshops on the vulnerabilities of the sectors and the SAA and the possible levers for action at different levels of organisation. The project also aims to consolidate a tool for territorial diagnosis of the SAA set up in the Boat project: SI-BOAT.
